Panzanella Recipe

Ingredients
1. Country bread cut into 1 inch thick slices (1/2 to 3/4pound)
2. peeled seeded and chopped cucumber (1)
3. fresh basil leaves cut into narrow strips or torn into pieces (30)
4. extra virgin olive oil (1/2 to ¾ tsp)
5. seeded and chopped with juice reserved tomatoes (2 to 3 pounds)
6. red wine vinegar (1/4c)
7. minced garlic (2cloves)
8. salt and freshly ground black pepper (to taste)
9. rinsed salt packed capers (1/3c optional)
10. rinsed, drained and chopped anchovies fillets of best quality (8 optional)

Method of preparation:-
1. Take a small bowl, mix garlic and vinegar in it. Add salt and pepper and then keep it aside.

2. Take a large bowl, Place ripe tomatoes and their juices in it. Now take a day old or older bread slices. Toast them or grill them and then cool them. Now tear the bread into bite sized pieces.

3. Add the bread pieces to the tomatoes. Then add anchovies, capers and cucumber. Mix 1/2cup of olive oil in vinegar mixture. Drizzle this oil and vinegar mixture over the tomatoes mixture.

4. Coat all the ingredients by tossing them. Add salt and pepper to give taste to the recipe. Now spread the basil leaves over the top of the salad.

Number of servings – 6

Tossed Italian Salad Recipe

Ingredients

For salad:-
1. thinly sliced radish (2/3c)
2. torn fresh spinach (4c)
3. green and sweet yellow pepper, cut into strips (1c)
4. red onion, sliced and separated into rings (1small)
5. torn red leaf lettuce (2c)

For dressing:-
1. Salad oil or olive oil (8tsp)
2. crushed, dried oregano (1tsp)
3. red wine vinegar (4tbsp)
4. garlic salt (1/2tsp)
5. water (1tbsp)
6. grated parmesan cheese (2tbsp)
7. ground pepper (to taste)

Method of preparation:-
1. For salad, take a large salad bowl. Place torn and fresh spinach, red leaf lettuce, radish slices, pepper strips and onion rings in the salad bowl and then toss them lightly.

2. For dressing, take a screw top jar. Mix vinegar, oregano, olive oil, garlic salt and 1 tablespoon of water in it.

3. Cover it and then shake it to mix all these ingredients well. Now pour the dressing mixture over the salad in the salad bowl. Toss them lightly to coat.

4. Now sprinkle the parmesan cheese over the salad and then toss it lightly. Then sprinkle the ground pepper according to your taste. Serve it immediately.

Make about 4 servings.

This Is Really Wonderful Salad Recipe

Ingredients
Rinsed canned garbanzo beans, patted dry (3/4c), coarsely chopped tomatoes (2), rinsed canned red kidney beans, patted dry (3/4 c), red vine vinaigrette, provolone cubed (6ounces), iceberg lettuce, cut into bite size pieces (1/4head), butter lettuce, cut into bite size pieces (1/2head), romaine lettuce, cut into bite size pieces (1/2head), turkey sausage, casings removed (12ounces), olive oil (2tsp), salt and freshly ground pepper.

Method of preparation:-
Take a heavy medium size frying pan. Place it over the medium high heat. Heat the oil in it. Add sausage in the pan and cook it. Cook it until it gets brown and break down into bite size pieces. Cook it for about 5 to 8 minutes. Then place the sausage in a plate. Cool it at room temperature. Now take a large bowl, mix all the Ingredients like lettuce, cheese, tomatoes and cooked sausage in this large bowl. Add vinaigrette and beans in it to coat all the Ingredients. Coat all the Ingredients properly and then season the salad with salt and freshly ground pepper according to taste. Take a serving bowl, place the salad in it. Garnish it and then serve it.

Tuna Salad Muffins Recipe

Ingredients
Tuna, drained (1can about 9 ounce), all purpose flour (1 1/2c), vegetable oil (1/3c), skim milk (3/4c), baking powder (2tsp), sugar (1tbsp), egg (1), chopped garlic (1tbsp), chopped green olives (1/4c), chopped green onion (1/2c), plain nonfat yogurt (1/2c), salt (1/2tsp).

Method of preparation:-
First heat the oven to 190 degrees C or 375 degrees F. Take muffin tins, grease them lightly. Take a bowl of medium size, mix flour, baking powder, salt and sugar in it and keep it aside. Take another bowl, flake tuna in it and then mix garlic, olives, green onion and yogurt in it and then keep the bowl aside. Take a small bowl, beat milk, egg and oil in it. Now add tuna mixture into the bowl of flour mixture and then slowly mix milk mixture in it. Now put the tuna mixture or salad in the muffin tins with spoon. Place the tins in oven and bake them at 375 degrees F for about 20 to 25 minutes until the tooth pick inserted in the center comes out clean. Then take out the tins from oven and keep them to cool. Remove the tins and then serve them.

Codfish Salad Recipe

Ingredients
1. Salted codfish (1 1/2lbs)
2. hard boiled eggs, shelled cooked and sliced (3)
3. extra virgin olive oil (1/2c)
4. red wine vinegar (1/4c)
5. thickly sliced head lettuce (1/2 optional)
6. chopped tomatoes (2 med.)
7. red onion, peeled and sliced into rings (1large)
8. potatoes, boiled cooled and chopped (3 to 4)
9. freshly ground black pepper and salt (to taste)

Method Of Preparation:-
1. Take codfish, wash it, put it in a saucepan and add water in it. Keep it to boil and then simmer it for about 5 minutes or until the fish becomes soft. Now take off the skin and remove the bones from the fish and then break it into small pieces.

2. Take another bowl, mix codfish, potatoes, onions, lettuce and tomatoes in it. Take a small bowl, mix vinegar, olive oil, pepper and salt in it.

3. Then pour some of it over the mixture of codfish and then mix it until the salad gets coated well. Now add slices of boiled eggs in salad and mix them gently. Now pour rest of the vinegar mixture over the eggs in the salad. Now the codfish salad is ready to serve.

Rotini Chicken Salad Recipe

Ingredients
1. Package rotini pasta (1/2 about 16 ounce)
2. skinless, boneless chicken breast (1 about 6 ounce)
3. frozen peas, thawed (1 cup)
4. dried thyme (1/4 tsp)
5. dried basil (1 tsp)
6. chopped fresh parsley (1/4 cup)
7. milk (2 tbsp)
8. sour cream (1/4 cup)
9. mayonnaise (1 cup)
10. green onions, sliced (2)
11. grated parmesan cheese (1/2 cup)
12. chopped celery (1/2 cup)
13. salt and pepper to taste

Method of preparation:-

1. Take a pot, boil lightly salted water in it and cook the chicken breasts in it for about 10 minutes until the chicken gets pink. Drain the chicken breasts and cut them into cubes.

2. Take a plate, place the chicken cubes in layer on it. Place the plate in refrigerator for about 1 hour to cool it completely.

3. Now cook the pasta in lightly salted boiling water in a pot for about 8 to 10 minutes until the pasta gets soft. Drain it and wash it in cold water to cool it.

4. Take a large bowl, mix thyme, basil, parsley, milk, sour cream, mayonnaise, green onion, parmesan cheese and celery in it. Mix chicken, peas and rotni pasta in it. Sprinkle salt and pepper over it and mix it. Keep it in refrigerator for about 1 hour to chill and then serve it.
